It is that time of year again as home cooks will be flocking to Ipswich to defend their honour and prove that they make the best jollof rice in town. 

This Saturday, our town's annual Jollof Rice Extravaganza will take place at Burlington Baptist Church Hall. This is the contest's sixth year, organised by the Karibu African Women's Support Group.

Jollof rice is a popular west African dish made with tomatoes, onions and assorted spices, served with meat, fish or vegetables. 

There are many variations of the dish, and every family has their own, unique recipe.

(Image: Charlotte Bond) As it is the start of Black History Month, it is the perfect opportunity to come together and celebrate African culture.

Last year's winner was Ghana, which had also won the contest once before. 

The Gambia still holds the record for the most wins overall, having won the competition three times.

Karibu's manager, Lara Uzokwe, said: "We’re excited to see who will have a seat on the throne this weekend, with the contestants including Cameroon, Gambia, Ghana and Nigeria.

"Make sure to come with an empty stomach so that you can really enjoy the variations of this African delicacy.

"Remember, you need to eat in order to help us choose a winner!"
