A new bakery shop is set to open this week on the outskirts of the town.
The windows have been blacked out in the former Christine’s Florist shop in preparation for the opening of the new Bramford Road Bakery on Friday, November 17.
After a few weeks of "unexpected delays", including some flooding, the doors are set to open at 10am.
The shop will operate as a takeaway with a small seating area and is run by Jo Haddock of Jo's Cakes, offering cakes, coffee, sausage rolls, sandwiches, paninis, toasties, and breakfasts such as bacon rolls and turnovers.
Jo's Cakes started in 2013 as a bakery run from home, mainly making cakes for birthdays and events, before opening the first shop around six years later in Kersey Mill near Hadleigh.
The shop later moved into a unit at the Hadleigh Road industrial estate on the outskirts of Ipswich, catering for more corporate lunch buffets for nearby businesses on the estate.
The business had to adapt to changing times with the Covid pandemic, with a call for more home deliveries and fewer events to cater for.
Ms Haddock said: "I am looking forward to getting back to what I enjoy doing - having the everyday customers back in for lunches and cakes and filling my counter up again.
"It has been hard work trying to get open. We originally planned to open in the first week of November, but we have had a few unexpected delays.
"We have had water coming through into the building and lifting the new flooring, so we had to put that right, but we are now working on the finishing touches.
"I am excited to be moving back into a shop and looking forward to welcoming new people into our shop."
Christine’s Florist closed in the new year after the owner announced her retirement. The shop was later put up for sale.
Opening hours will be finalised and advertised on the Jo's Cakes Facebook page next week.
